Banana & Coconut Pancakes
Whole food pancake goodness...
Pancakes are one of my favourite foods and one that I missed most when I moved towards a grain free diet. This recipe has been my go to anytime I'm craving some of that pancake goodness. As these pancakes are made with a banana base they are naturally sweet and moist so are great on their own. This recipe is from episode 10 of my Day of Eating video series.

Bulk Ingredients:
3 bananas
3 large eggs
60ml coconut milk
40g coconut flour
1 tsp vanilla extract
1 tsp bicarb of soda
Spices:
Pinch of salt
Method:
Add all the bananas to a mixing bowl and mash into a puree.
Add the eggs, coconut milk and vanilla extract to the bananas. Mix until well combined.
Add the coconut flour, bicarb of soda and pinch of salt then thoroughly mix everything together.
Bring a good non-stick frying pan to medium-high heat and add a cooking fat (I used butter). Once the pan is up to heat, add a serving of the mixture to the pan and spread slightly.
Leave to cook for 2-3 minutes or until the pancake binds together and becomes solid. The key to this recipe is to leave the mixture long enough to cook on the first side. Flip and cook for additional 1-2 minutes on the other side. Repeat until the mixture is finished.
Plate the pancakes in a stack and cover with any toppings that look good. I went for greek yoghurt, frozen berries and coconut flakes. Enjoy!
